Banana Spice Muffins

With the Olympics in full force, we’ve been streaming the hockey games in the studio during the mornings. So I decided to make the team @goodsircreative some breakfast treats for Canada’s quarter final hockey game against Latvia. I wanted to try a little something different so I took a regular spice muffin recipe and made a some tweaks to free it from gluten and use a up a few items in my fridge. The result turned out pretty fantastic.


½ cup of apple sauce
3 tbsp of olive oil
1 mashed banana
1 egg
¾ cup of milk
½ cup sugar

¾ cup quinoa flour
½ cup sorghum flour
½ cup cornstarch
1½ tsp baking powder
¼ tsp nutmeg
1 tsp cinnamon
½ tsp of salt
1 tsp of xanthan gum
½ cup butterscotch chips

Mix wet ingredients thoroughly in a small bowl. In another bowl, combine all the dry ingredients. Add wet to dry and stir well. Line a 12 cup muffin tin and distribute mixture evenly into cups.

Bake at 350° for 20-25 mins.
