I can’t do wheat. It’s not that I don’t want to or that I have a choice – it doesn’t agree with me (stupid allergies). So I’ve been gluten free for close to 3 years now and things are so much better.
Along the way I’ve learned a bunch of tricks, tried all sorts of recipes and have adapted some of my old favourites to be gluten free. I eat meat and dairy, just no wheat – and I try my best to get recipes to be as close to the real thing (real thing meaning with wheat) as possible. My husband isn’t GF so recipes have to hold up;)
